The Tuscan Meal Plan

This semester, we have truly been eating better than ever before. Tuscany is known for its hearty plates, rich flavors, and simple ingredients prepared with care, and we have been lucky enough to experience that every single day.

Our meal plan is hosted at Le Cantine del Palazzo Viti, owned and operated by Chef Massimo and Chief Karla, along with our wonderful servers Mattia, Mirko, and Leo. Together, they have created an environment that feels warm, welcoming, and authentically Italian where meals are not rushed, but enjoyed and shared.

During lunch, students are served two plates: a pasta and a side. Dinner is a larger, three plate meal consisting of a pasta, a protein, and a side. Some of our favorite dishes include the arrabbiate pasta alle verdure e pana (spicy & creamy vegetable pasta), the pollo arrosto (roasted chicken leg), and patata fritte (fries). On especially good days, Massimo will even surprise us with desserts, a small gesture that always brings excitement to the table.

Overall, the meals have become more than just food , but a big part of the cultural experience. Here in Volterra, dinners start later in the evening and give us a chance to talk about our day, laugh, and just spend time together. Meals last longer here, and no one is in a rush. Eating isn’t just about fueling up, it’s about slowing down, enjoying the moment, and appreciating the people around you.
